Vietnamese Summer Rolls

If you like crispy spring rolls, welcome to their healthier cousin. Summer rolls are rolled in a rice-based wrapper and not fried. Best part is that you can be creative with the ingredients and they are a snap to make.

Summer Rolls
 1 package, tofu
 1 carrot, shredded
 1 cup bean sprouts
 1 bunch, fresh cilantro
 1 cup Any veggies that you have in the fridge. Chopped or shredded
Peanut Sauce
 ½ cup unsalted peanut butter
 ¼ cup water
 ¼ cup rice vinegar
 ¼ cup soy sauce
 ½ tbsp grated ginger
 3 cloves, garlic

Summer Rolls

Slice and shred vegetables. Cut tofu into strips.

Fill the bottom of a deep plate or wide bowl with warm water.

Completely submerge a rice wrapper in the warm water for 2 seconds. Even though it may still feel stiff, remove and place on a work surface.

Fill the wrapper with your tofu and vegetables, and wrap per package instructions. If the rice wrapper gets too gummy to work with by the end of the process, you are submerging it in the water for too long. Adjust as necessary.

Peanut Sauce

Add all the peanut sauce ingredients into a food processor and blend until smooth.
