A perfect way to warm up on a chilly evening, this Vegan Rice Noodle Soup is super quick and easy to make as you can cook it all together in one pot.

Leave rice noodles to soak in a bowl filled with boiling water according to instructions on packet
Meanwhile, heat oil in saucepan and add spring onions, garlic, ginger and sesame seeds once hot
Once these have all browned nicely, add the vegetables, tamari (or soy sauce), sesame oil, miso and pepper with enough water to cover
Bring to the boil then turn down the heat
Add rice noodles, taste the soup and adjust seasonings if necessary
Pour into bowls and sprinkle with fresh coriander and sliced chilli, if desired
