Vegan Blueberry Muffins

This is a great one for the kids. They can get into the kitchen and succeed with a vegan alternative to a muffin. We like blueberries in our household, but it is simple to vary up with raspberries or dairy-free chocolate chips.

 1 ½ cups flour
 ¾ cup sugar
 ½ tsp salt
 3 tsp baking powder
 4 oz unsweetened apple sauce
  cup vegetable oil
  cup unsweetened almond milk
 1 cup blueberries, raspberries, crushed banana, or vegan chocolate chips
Topping
 ½ cup sugar
  cup flour
 ¼ cup margarine, melted
 1 ½ tsp cinnamon

Preheat oven to 400 degrees

Grease muffin tin or line with muffin liners

Mix together the flour, sugar, salt, and baking powder.

Add in the applesauce, vegetable oil and almond milk. Milk to an even consistency.

Lightly fold in your chosen flavor, whether crushed banana, blueberry or vegan chocolate chips.

Pour into muffin tins

Mix topping ingredients together in a bowl. The mixture will be crumbly.

Sprinkle the topping evenly on top of the muffins and bake for 20-25 minutes.
