Easy to prepare, and lentils are a great source of protein, folate, manganese, iron and phosphorus!

 1 onion, finely chopped
 4 garlic cloves, finely chopped
 2 celery sticks, finely chopped
 2 carrots, finely chopped
 1 ½ cups lentils
 3 ½ cups water
 28 oz can unsalted, crushed tomatoes
 ½ cup fresh basil, chopped
 2 tbsp Italian seasoning
 Pinch red pepper flakes
 Salt and pepper to taste
 1 lb 100% whole wheat spaghetti

Combine all ingredients except spaghetti in a large pot. Bring to a boil, reduce heat to low-medium and simmer for about 30 to 40 minutes or until lentils are soft. Stir every once in a while.

Meanwhile, cook the spaghetti following the package instructions.

Serve lentil Bolognese sauce on top of spaghetti.
