A favorite in our house. This recipe from Ynut is easy and delicious. It's a great way to start your day with a filling meal.

 1 ripe banana, mashed or 1/2 cup unsweetened applesauce
 ½ cup rolled oats
 1 tbsp chia seeds
 ½ cup unsweetened soy or almond milk
 ¼ tsp cinnamon
 ¼ tsp vanilla extract (optional)

Mix all ingredients well in a small bowl or glass, cover and refrigerate overnight or at least 2 hours. Enjoy cold.

Optional: add toppings like sliced strawberries, bananas or almonds.
